This is a healthy, quick, and easy to make Lumpia (spring rolls) using canned Uni-Pak Tuna Mackerel filling. I actually made this after I dropped off my preschooler for her 2 1/2-hour class. I only made a batch of this for my lunch and pick her up at school right after.


Ingredients:
- 2 cans Uni-Pak Mackerel in Natural oil (big - 425g)
- 2 pcs. potato
- 1 pc. carrot
- lumpia wrapper
- 2 tbsp. onion, minced
- 1 tbsp. garlic, minced
- 6 pcs. celery leaves, minced
- 1 tbsp. flour
- 1 pc. egg
- 1 cup cooking oil
- cheese, salt, ground pepper
Cooking Procedure:
2. Peel the carrot and potatoes and bring to boil using the drained liquid from tuna, and diced.
3. Add the minced celery, onion, garlic, flour, egg, diced carrots and potatoes.
4. Add salt, and ground pepper to taste.
I have in mind adding vetsin or msg., but decided not to after having discovered that Uni-Pak was tasty enough!
5. Topped the filling with cheese and roll.
6. Deep fry and serve with catsup or your fave vinegar dipping sauce (mine was ready made!).
Hey, this is my first time to cooked lumpia rolls using tuna filling. We only had Mackerel as is, (preferred by my eldest) ginisa, or with sotanghon π³. So I am looking forward to try siomai and bread rolls for next time using Uni-Pak Mackerel as I was inspired by fellow bloggers to try out other recipes after receiving a gift pack.

Canned fish as lumpia. We haven't tried that. We just do the usual cook for sardinas or mackerel.
